Reduced-Fat Tuesday

I almost called this post “Non-Fat Tuesday”, but that’s just not accurate.

People – we have a holiday with the word “fat” in it.  Does anyone else think this is totally weird?  I mean, I am all about celebrating for silly reasons, but still – I’m calling it “Reduced-Fat Tuesday”.  Makes me feel better about myself.

So here’s what I ate today:

Subway “Mornin’ Flatbread” breakfast sandwich – egg whites, cheese, spinach, tomato, green peppers, and a little honey mustard – SO GOOD (4)
Skinny Vanilla Latte (2)

Turkey Reuben sandwich (14)
Fruit salad (0)

Snacking at Central Market
Random samples (1)
Cucumber and bell peppers (0)
Hard-boiled egg (2)

Tuscan Baked Zucchini (8)
Whole-wheat pasta with marinara sauce (6)
Wine (2 – promise! I didn’t have a full glass, I swear.)

Total points today: 39 (only 4 over my daily points allowance)

And this is what I DID NOT eat:

That’s right.  One of my co-workers made beignets for Fat Tuesday.  I could smell them FROM MY FRIGGIN’ DESK.  Yet, I walked over to Subway in the stadium and got the healthiest breakfast sandwich I could find (well, almost – I guess I could have done without the cheese…HAHA HILARIOUS) and begrudgingly bested the beckoning beignets*.  I was so proud of myself.  I even looked inside the bowl to take this photo.  BAM!

I have my adorable friend Jessi to thank for the dinner idea!  She wrote this blog post and inspired me to try Tuscan Baked Zucchini.  (It’s from the latest Women’s Health magazine, and I have yet to find the recipe online.)  Let me tell you, folks – it was the bomb dot com.

The stuffing involves artichoke hearts, zucchini, garlic, couscous, bread crumbs, marinara sauce, and parmesan cheese.  Sprinkle a little mozzarella on top, bake those bad boys, and you have got a seriously filling and absolutely delicious meal!  And 300 calories for TWO halves, with leftovers for another dinner? Doesn’t get much better than that.

Taking a break from working out tonight, as my inner thighs and butt muscles feel like they might fall off every time I take the stairs.  Or sit down.  Or….walk.
